Update, what update

 The fire restoration company sent out a specialist who was supposed to look up the chimney and make a report for the insurance company. A KID who looked about 17 arrived to "inspect our gas furnace". What the hay????? We don't have a gas furnace yet. Well he asked what kind of furnace we do have. Wood and Oil M, responded. Okay, he would inspect that. No, NO, Wait, you're here to look at the chimney and do a report for the insurance company. No can do, he's not qualified......

It has cooled off quite a bit. The front lane is icy. The snow and ice have mostly slid off the back roof.

We went for a nice trot up the back road today. This evening the snowmobiles are roaring up and down and up and down. They hit the road by my lane and leave a trail of sparks. Idiots!

I baked a really nice cake today. Do you remember when Mayonnaise cake was all the rage? I tried it again. The main tip is to use REAL Mayo, not Miracle Whip. I used the recipe on the Hellman's site. The cake is a bit dense and fudgy, but not cloying. I made a frosting with a package of cream cheese, a small carton of whipping cream and 1/3 cup of icing sugar. Beat until light and fluffy, but thick. It's the perfect frosting for that cake. My mother used to use Miracle Whip when she made this cake and I didn't like it one bit.  The Hellmans Mayo has a nice mild flavor and works perfectly.

  1. My parents used to eat salads with Miracle Whip. Needless to say, I wasn't fond of salads, One day, once removed from them, I discovered Thousands Islands.

  2. That is very strange. Is that a delaying tactic by the insurance company?
    Do you remember the 'tomato soup cake'?
    So glad we have very few snowmobiles here. I really abhor their noise and smell.

    1. A friend who had a fire two years ago warned me about these restoration companies. Her's tried to get a whack of money out of her for "work" they did, then held her belongings hostage until she paid up. Mine is stalling. I'm going to talk to my insurance people early this week and see about getting my own people in - but I need to get the report forms from them - and the workers have to be willing to fill them out. Forms were supposed to come from Toronto two weeks ago and they still haven't shown up.

    2. My brother in law made tomato soup cake for a picnic last summer. (He loves to experiment with whacky recipes!). I didn't care for it at all.

  5. You are making me hungry ... after I nod about the idiot and the inspection. We built our house ourselves and the inspection of JG's wiring job is a story in itself.
    I am copying off the icing recipe - I love new icing styles. Thanks!!!

    1. My ex husband and I built the shell of this house. He did hire licensed trades for the important stuff though. Our electrician was half in the bag most of the time. When the builders opened a wall upstairs to repair our tornado damage in '02, they found the live wires for potential baseboard heating laying with out marettes!

    1. Stories about how fire situations are handled around here are nuts. We know people who have had a burned out house across the street from them for two years. Beyond a chain link fence being put around it, NOTHING has been done.

  7. Have you talked to a Lawyer yet? Insurance adjusters are in the habit of short-changing the victims.
